Snacks funcionales y saludables: Formulaciones, beneficios nutricionales e implicancias en la salud pública

Los snacks funcionales y saludables representan una alternativa nutricional frente a los productos tradicionales altos en azúcares, grasas y sodio, vinculados con enfermedades crónicas. Esta revisión examina las características de estos snacks, incluyendo el uso de ingredientes como harinas integrales, legumbres y subproductos agroindustriales, junto con tecnologías de procesamiento como extrusión y liofilización. Los hallazgos demuestran que estos productos ofrecen beneficios como mejor control glucémico, mayor aporte de antioxidantes, protección cardiovascular y promoción de hábitos alimentarios más saludables, manteniendo una buena aceptación sensorial. Los resultados subrayan el potencial de estos snacks como herramienta en salud pública, aunque señalan la necesidad de profundizar en aspectos como la estabilidad nutricional y su viabilidad a escala industrial.
